    Description: Anisic aldehyde is a safe food additive for human, it has significant antifungal activity against Candida, including azole-resistant strains.

    METHODS AND RESULTS:
    The contents of lead and arsenic in seven batches food flavors(Anisic aldehyde) were respectively determined by dry method digestion graphite furnace atomic absorption spectrometry and pressure digestion with acid mixtur(e nitric acid:perchloric acid=20:1) atomic fluorescence spectrometry.The adding standard recovery rates of lead and arsenic by this method were 96.7% and 94.8%,the RSD were 3.9% and 3.5%,the detection limits were 0.005 5 ng.mL-1,0.003 2 ng.mL-1 respectively.The method has characteristics of simple,rapid and good repeatability.The lead contents of the seven batches Anisic aldehyde samples were within 0.005 5 mg/kg and 0.150 0 mg/kg,meanwhile,the arsenic contents of that were within 0.039 mg/kg and 0.196 mg/kg.
    CONCLUSIONS:
    The contents of lead and arsenic were low, hence Anisic aldehyde is safe as a food additive for human and the results can provide scientific reference for formulating national safety standards of distillation flavor spices.
